Another “use up what’s left in the fridge/freezer” success story right here. This is a paleo dinner that is very easy, minimal ingredients and so much flavor all in a tiny bowl. It’s is a crockpot soup which makes it even easier! Italian sausage paired with tomatoes and peppers are a dream combo! Very Italian tasting…yum 🙂

1⃣Slice 1.5lbs Italian sausage (mild/medium/hot or a combo) into 1/3″ pieces and place in a frying pan to brown on both sides. When both sides are browned, transfer meat to crock pot
2⃣Place 1T butter (cooking fat of choice) to melt then add in 1 small diced onion. Cook until beginning to turn translucent then add in 2 bell peppers (colors of choice (I used red and orange) that have been thinly sliced. Also add in 1T chopped garlic.
3⃣Cook for about 5 minutes until just turning tender then add in 1 can diced tomatoes. Season with Italian herbs, salt and pepper. Stir until heated thru then pour into crockpot with meat.
4⃣Top with 2c chicken bone broth or store bought stock
5⃣Cook on low for 4 hours or high for 2

Three out of the three people I served this to said this was the best chili they ever had…so I’d say it’s a winner! Roasted butternut squash combined with grass-fed beef and tons of veggies! Seasoned this with herbs, chili powders and a dash of cinnamon which made this the perfect fall dish!

ROASTED BUTTERNUT SQUASH
1⃣Peel and dice one small/medium butternut squash into 1″ pieces and place in a bowl
2⃣Drizzle with olive oil and mix pieces around to ensure they are all coated then season with:
🔹Salt
🔹Pepper
🔹Chili powder
3⃣Place on sheet pan lined with parchment paper and place in 425F pre-heated oven and cook for 25-30 minutes

CHILI
1⃣In a large pot, cook
🔹2lbs grass-fed ground beef
🔹1 Onion, chopped
🔹1 Jalapeño, diced
🔹1 Green bell pepper, chopped
🔹1 Zucchini, chopped
🔹3 stalks of celery, chopped
🔹4 cloves of Garlic, diced
🔹Crushed red pepper
🔹S&p
🔹Garlic powder
2⃣When beef is fully browned, add in:
🔹2 canned or fresh diced tomatoes
🔹1can black beans
🔹1T tomato paste
🔹roasted butternut squash
3⃣Stir above then add in seasonings to flavor as desired (amounts are rough guesstimates):
🔹3T Oregano
🔹1t Cayenne pepper
🔹1t Crushed red pepper
🔹3T Chili powder
🔹1t Chipotle chili pepper
🔹2T Emeril’s essence
🔹S&p
🔹1T Paprika
🔹1t Cinnamon

This is an easy “throw&go” meal. All you do is put everything in a crockpot, leave it alone for a few hours, come back and dinner is served! Healthy, nutritious and a great source of protein! Delicious as well!

1⃣In a crock pot combine and leave on low for 6-8hrs or high for 3-4hrs (until chicken becomes shred-able):
🔹3 chicken breasts, cubed or left full
🔹2 celery stalks, chopped
🔹1 small onion, chopped
🔹1c sun dried tomatoes, chopped
🔹1/2c artichoke hearts, quartered (from can/jar) then chopped
🔹1c chicken stock
🔹1/2c dry white wine
🔹2T garlic, chopped
🔹S&P
🔹Cumin
🔹Crushed red pepper
🔹Garlic powder
2⃣The last 30min-1hr add in (or add in with the rest of the ingredients if you won’t be able to add later on)
🔹1bunch asparagus, cut into 1″ pieces
3⃣Serve!
