I used my left over almond pulp from making almond milk to make these cookies! Instead of dehydrating the pulp into a flour, I left it moist in for this recipe. It’s also a super easy recipe because all of the measurements use a tablespoon!

1⃣In a bowl combine:
🔹pulp from making almond milk with 1c almonds
🔹2T coconut oil
🔹2T nut butter
🔹2T shredded coconut
🔹2T coconut sugar (or honey)
🔹2 eggs
2⃣Roll into 1″ balls and place on a baking sheet lined with parchment paper
3⃣Use dark chocolate chunks to press balls down into cookie shapes and bake at 350F for 20min


A spin-off from my “Coconut Curry Shrimp” and it turned out deliciously! I changed it to chicken with green beans and served it over spaghetti squash. Perfect, well rounded dinner.

1⃣In a large sauce pan bring to a simmer:
🔹1c coconut milk
🔹2T coconut butter
🔹1/2c chicken bone broth
2⃣Then add in and simmer for a few more minutes:
🔹1T curry
🔹1T paprika
🔹1/2T chili powder
🔹1t crushed red pepper
3⃣Taste sauce to see if you would like more seasoning then add in:
🔹Shredded chicken (previously cooked)
🔹Green beans (boiled until tender in chicken stock)
4⃣Simmer a few more minutes then serve over “noodles” of 1 small Spaghetti squash (cooked and scooped out ahead of time)

Another simple, healthy and delicious dinner. This chicken and veg dinner is pack with protein and nutrients while maintaining delicious flavors. Juicy chicken and crunchy green beans are a great combo!

Green Beans
1⃣Line pan with tin foil and spread out green beans
2⃣Drizzle with olive oil and season with:
🔹garlic powder
🔹crushed red pepper
🔹chopped garlic
3⃣Bake at 425F for 10 min
4⃣Remove and top with shredded parmesan and sliced almonds then put back in the oven and bake an additional 5 min

1⃣Marinate in coconut milk and then season with salt and peppers.
2⃣Get 3 bowls:
🔹(1)coconut flour (any flour of choice), Emeril’s essence seasoning, garlic powder, crushed red pepper
🔹(2)2 egg whites beaten
🔹(3)1C oats, 1/2C shredded coconut, any herbs of choice (I used parsley and oregano)
1⃣Dip the chicken in 1-2-3 and then pan fry in coconut oil or bake drizzled with coconut oil
**I have also substituted the coconut for shredded parmesan and it is just as delicious! If you dont have some of the ingredients just use what you do have to make it your own! let me know how it turns out 🙂

This is one of my favorite dinners! It is so so yummy seriously! Shrimp and veggie noodles in a light coconut curry sauce…mmmm. I promise you, one of the best dishes ever! Easy to make, so healthy and heavenly tasting.

Coconut Curry Shrimp
1⃣In a pan sautée in coconut oil until translucent/cooked
🔹1red medium red onion, thinly sliced
🔹1 large carrot, peeled then use the peeler to shave thin, flat noodle-like pieces
🔹1T garlic
2⃣Remove and place in a bowl then add to pan and cook until heated through
🔹10-15 large shrimp (I used the pre-cooked and peeled)
🔹6 slices of ham, shredded with fingers
3⃣Remove shrimp/ham and add to onion/carrot bowl and to the pan add (taste the sauce as you are making it to judge how much of the spices you need more/less of)
🔹1 can light coconut milk
🔹2T coconut butter
🔹1T garlic, chopped
🔹1t crushed red pepper
🔹1/2-1t curry
🔹1t garlic powder
4⃣Let the sauce simmer for a few minutes to thicken then add in 🔹bowl of veg and meat
🔹1c steamed broccoli
5⃣Serve it as is or over spaghetti squash (We tried this and it was awesome! Stretched the dish to make more as well!)

TO DIE FOR! Plain and simple. Dark chocolate, coconut, and raspberry all wrapped up in a little bite of heaven. So good. That is all.

1⃣In a bowl combine:
🔹3sc chocolate protein powder
🔹1c oat flour
🔹1/3c milled flax seed
🔹1T cacao
🔹2T coconut flour
2⃣In a mug heat:
🔹1/4c coconut oil
🔹1/8c honey
🔹2T Justin’s chocolate hazelnut butter or nut butter of choice
🔹1T coconut milk
3⃣Combine wet and dry
4⃣Add 1 small container of raspberries, mash with fingers as you put them in the bowl. Stir so they are swirled in the mixture
5⃣Roll into bites and cover with dedicated coconut (may seem a little “wet” but the coconut flour will absorb the extra moisture while it sits in the fridge)

This dessert is what I used my “cinna-sweet protein mixed nuts” for! Sweet, warm peaches and blueberries topped with homemade coconut protein frozen yogurt and finished off with protein candied nuts makes this hot-cold combo a killer dessert! So easy to make too…and lick the bowl clean, good!

Coconut Pro-Fro-Yo
1⃣Mix in freezer-safe bowl
🔹1c greek yogurt
🔹1/2c dedicated coconut
🔹2T coconut water
🔹1sc vanilla protein powder
🔹1t vanilla extract
🔹Optional-sweetener of choice (I didn’t use anything, but taste as you are making it to see if you want it sweeter)
2⃣Freeze for a couple hours before you want to eat it

Peachy-Blue Mix
1⃣In a sauce pan, cook until tender and heated through, stirring:
🔹3 peaches, cubed into 1″ pieces
🔹1c blueberries
🔹1/8c honey
🔹Zest of 1 lemon
🔹Juice of 1/2 lemon
2⃣Place fruit mix in a bowl then add a scoop of pro-fro-yo and top with cinna-sweet mixed nuts! Enjoy

This smoothie is packed with nutrient dense, power foods! Coconut for immunity because of its anti-everything (fungal, bacterial, viral) properties, jicama for fiber, pineapple for antioxidants and vitamin c and chia seeds for nutrients and omega-3s. I added a scoop of whey for an extra boost of protein and it turned out to be one of the best smoothies! Give it a try!

Tropical Powerhouse Smoothie
1⃣Mix in a blender:
🔹1c ice
🔹1/2c coconut, fresh
🔹1/2c jicama, fresh
🔹1/2c pineapple, fresh
🔹1/4c greek yogurt
🔹1/8c coconut milk/water
🔹1/8c pineapple juice
🔹1/8c almond milk
🔹1/2scoop vanilla protein powder
🔹1T chia seeds
(🔹1 banana-optional but would add extra thickness and would be tasty as well!)

This was a super easy protein bite recipe. It would even have been delicious without the “surprise” in the middle or chocolate on top for a quicker make. But, I love the sweet pop of the surprise in the middle and the dark chocolate drizzle was a perfect addition as a topping. These things probably would have been gone by now but I’m saving them to bring to my yoga class today. I hope they like them! I hope you enjoy them as well 🙂

1⃣Combine in a small bowl:
🔹1c oat flour
🔹2sc vanilla protein powder
🔹1/3c coconut flour
🔹1/2c dedicated coconut
🔹1/8c baking stevia (optional)
2⃣Add in to make a dough-like texture:
🔹3/4c almond milk
🔹1t vanilla extract
3⃣”THE SURPRISE”-Grab 2 blueberries and a small amount of dough. Wrap the dough around the blueberries and form into a small bite. Continue until all of the dough is rolled
4⃣Pipe on melted dark chocolate and put in the fridge until ready to eat

Sweet peaches pan seared in coconut oil, sprinkled with cinnamon and drizzled with molasses! A delicious, quick and easy dessert that was totally satisfying and perfect for right after dinner. Homemade vanilla fro-yo on top would make this even better…next time!


One of my favorite breakfast dishes is zoats. Zucchini+oats=zoats! You can make these sweet or savory and they are delicious either way. I have made these in a variety of different flavor combos and they are always yummy. By using the grated zucchini, it cuts down on the carbs while adding in a veg and extra vitamins. These are very filling and definitely satisfying. Give them a shot and let me know what flavor combos you come up with!

Mango Coconut Zoats
1⃣Bring to boil for 5 min:
🔹1/2c oats
🔹1/2c grated zucchini
🔹1c milk or water
🔹1t cinnamon
🔹1t sweetener of choice (optional)
🔹1T coconut oil
🔹1t coconut extract
🔹Pinch of salt
2⃣Mix in, boil and stir for 3 more minutes 1/4c liquid egg whites
3⃣Turn off heat and stir in
🔹1/2 chopped mango
🔹1/3c shredded coconut
4⃣Optional add-ins I usually use
🔹1/2 scoop protein powder
🔹1t chia seeds
🔹1T flax seed
🔹1t psyllium husk
🔹1/4c nuts

**You can also microwave this, which I do when I’m in a rush. Add egg whites to first step ingredients and microwave on 30sec intervals, stirring between each, until fully cooked**
