We bought some of the infamous Cinnamon Swirl by @cellucor and of course it was so good! As soon as you open the container, the smell of Cinnabon fills the room. Naturally, I decided to make pancakes with it and they were so so yummy, I loved the extra cinnamon taste! Added some flax for an extra nutritional boost and topped it with a protein cinnamon swirl glaze. They turned out perfectly! Off to the gym soon to use these as fuel to lift those weights!

1⃣In a bowl mix:
🔹1.5sv cinnamon swirl protein powder
🔹1c oat flour
🔹1/4c flax seed
🔹1pkt stevia
🔹1t vanilla ext
🔹1/4c coconut flour
🔹1/2c oats
🔹1/2c greek yogurt
🔹1/3c apple sauce
🔹1/2t baking powder
🔹1c almond milk
2⃣Scoop onto med-low preheated griddle or pan with coconut oil and cook
3⃣Top with cinnamon swirl protein glaze (recipe below) and a dash of cinnamon

Cinnamon Swirl Protein Glaze
1⃣Mix in a mug:
🔹1/3sc cinnamon swirl protein powder
🔹1T greek yogurt
🔹1t almond milk
2⃣Drizzle over Procakes


I had some figs to use up and was craving some pancakes for breakfast. What a perfect combo-chocolate and figs! These turned out so delicious, thick and moist. The sauce was so rich and was the perfect topping!

Choco-Figgy Procakes
1⃣Mix in a blender
🔹8 figs
🔹1/2t caramel
🔹2T coconut oil
🔹1/4c geek yogurt
🔹1/4c coconut almond milk
2⃣Mix in bowl then stir in wet:
🔹2t cacao
🔹2sc chocolate protein powder
🔹1/2t baking powder
🔹1/4c flax
🔹1/8c stevia
🔹1c buckwheat flour
🔹1/2c oats
3⃣Scoop onto med/low pre-heated griddle pan and place a slice of fig on the batter
4⃣Serve with chocolate sauce
**for even sweeter pancakes, add in 1/4c honey and 1/4c dark chocolate chips to the batter before cooking!**

Chocolate Sauce
1⃣Heat in a mug
🔹1/4c Justin’s chocolate hazelnut butter
🔹1T coconut oil
2⃣Spoon on top of pancakes

Where have these been all my life!?😳These were so good oh my. Seriously your life will not be complete until you try these. TO. DIE. FOR. Super moist, cheesecakey, protein pancake with a strawberry chia jam on the inside. I added more chia jam on top when I ate them and no other topping was needed. Thought about making a protein fluff, but after tasting it with just the jam, decided it wasn’t necessary 😋 Now go make these and tell me what you think. Am I right or am I right?!

Strawberry Chia Jam
1⃣In a blender combine until well mixed
🔹2c strawberries
🔹2T water
🔹2T chia seeds
2⃣Refrigerate until it thickens up, about 15min

Cheesecake Protein Pancake
1⃣In a blender mix, should be thick
🔹1/4c cottage cheese
🔹1/4c greek yogurt
🔹1/8c almond milk
🔹1sc protein powder
🔹3T coconut flour
🔹3T oat flour
🔹1T stevia
🔹1t baking soda
🔹1t vanilla extract
2⃣Spoon some onto a preheated griddle pan on low heat
3⃣Add a dollop of the jam and then top with more batter (just enough to cover the jam)
4⃣Flip when the edges start to brown
5⃣Serve with more jam and enjoy!

Protein pancakes with an apple-date combo and spiced with a cinnamon-molasses greek yogurt drizzle…HEAVEN! These were thick and fluffy and sweet and yummy and I could go on forever. I used roasted almond flour in the batter and it added a smokey undertone that complimented the sweetness of the apples and dates perfectly 👌 Try these and let me know what you think.

Apple Cinna-Date Procakes (Protein Pancakes)
1⃣Mix in blender until frothy:
🔹2 egg whites
2⃣Add to egg whites in blender:
🔹1/2c oat flour (homemade)
🔹1/2c roasted almond flour (homemade)
🔹1 scoop vanilla protein powder
🔹1/4c almond milk
🔹1T flax seed
🔹1T chia seeds
🔹1T stevia
🔹2t psyllium husk
🔹1t vanilla extract
🔹1t baking powder
🔹1/2t cinnamon
3⃣Let it sit and thicken while prepare apple-date mixture

Apple-Date Mixture
1⃣Melt 1T coconut oil in small frying pan in medium heat
2⃣Add in and cook until apples soften:
🔹1 diced apple
🔹2 dates soaked then diced
3⃣Stir 3/4 of mixture into pancake batter, reserve the rest for garnishing
4⃣Cook pancakes in pan over med-low heat with coconut oil
5⃣Plate and drizzle with Cinna-lasses sauce and too with remaining apple-date mixture

Cinna-Lasses Protein Sauce
1⃣Heat in small mug for 20 seconds
🔹1/4c greek yogurt
🔹1/4t vanilla extract
🔹1/4t maple extract
🔹1t stevia
🔹1t molasses
2⃣Stir in 1t vanilla protein powder after heated and drizzle over pancakes

**To make homemade oat and almond flour-blend ingredients in coffee grinder. For this recipe I used old fashioned oats and dry roasted almonds.
**Trick for almond flour-to ensure all almonds are ground before it turns into almond butter (it will if you grind it too long) shake the coffee grinder while it is grinding. You will get an even blend this way and not have almond chunks!

I had about a half of a can of pumpkin left over from my bites yesterday, so I decided to make pumpkin pancakes for breakfast. I haven’t made protein pancakes in a while so I figured I’d give this flavor a shot. These pancakes were so delicious and so filling…they definitely hit the spot! The inside of the pancakes had the texture of warm pumpkin pie 😱 I also made a maple greek yogurt sauce to drizzle over the top. The added sweetness was perfect with the pancakes and the crunch from the toasted pecans and pumpkin seeds was the perfect finishing touch!

Pumpkin Protein Pancake
1⃣Mix all ingredients in small bowl
🔹3/4c canned pure pumpkin
🔹1scoop vanilla protein powder
🔹1/2c oat flour (oats ground in coffee grinder)
🔹1/4c coconut flour
🔹1/4c greek yogurt
🔹2 egg whites
🔹1T stevia
🔹1t psyllium husk
🔹1/2t pumpkin spice
🔹1/2t vanilla extract
2⃣Cook in greased pan on low to med-low to ensure the outside doesn’t burn before the middle gets heated/fully cooked

Maple Greek Yogurt Sauce
1⃣Mix in mug then microwave for 15-20sec
🔹1/4c greek yogurt
🔹2t honey
🔹1/2t maple extract
🔹1/2t vanilla extract
🔹Splash of almond milk
🔹Dash if cinnamon
2⃣Pour over plates pancakes and top with toasted (in dry frying pan until fragrant) pecans and pumpkin seeds
