Peanut Butter Protein Fudge Cups

These peanut butter fudge cups are protein packed and a great alternative for the “Reese’s lover” in the family (who isn’t though?). The chocolate fudge layers are dense and rich while the peanut butter layer is on the lighter side. The combo together makes for a delicious protein snack that rivals the best around! Enjoy 🙂

Chocolate Fudge layers:
1.) Combine dry
-1/2c unsweetened cocoa powder
-1/2c protein powder
2.) Combine and heat in microwave
-1/4c coconut oil
-1/4c nut butter (I used peanut)
-2T honey
-1t vanilla extract
-1t sweetener (I used stevia)
3.) Combine dry with wet and mix, may need to add water 1T at a time until desired consistency achieved

Peanut butter layer
1.) Heat in microwave
-1/4c peanut butter
-1/4c almond milk
2.) Stir dry into wet (adding more milk if necessary)
-1 scoop vanilla protein powder
-1/4c PB2

1.) Spray cake-pop pan with non-stick spray
2.) Scoop about 1/2T chocolate fudge layer on bottom and press to flatten
3.) Scoop about 1/2T peanut butter layer in middle
4.) Top with about 1/2T chocolate fudge layer again and press to flatten and compress the entire mold
5.) Freeze for 20 min then take out and loosen sides with knife before flipping over to release
6.) Optional-top with melted chocolate
7.) Store in fridge
